 Story behind chilli chicken 

A dish made out of beautiful delicate chicken coated with sauces.It is popularly known as a Chinese starter,but is it really chinese? The answer is 'NO'.you won't find any of these dishes over there,it's a fusion of Indian and chinese cuisines (Indo-chinese).These are all developed in India.



Recipe 

1. Boneless chicken which is brined in salt water for atleast 3hours,which leaves chicken juicy from inside. 

2. Marination :- Add red chilli powder,little bit of ginger garlic paste,chilli sauce,soya sauce,cornflour and maida.

Tip:- Not too much of cornflour or maida is added.it should be slightly coated then you will love it.

3. Add egg white,few drops of oil,artificial color (totally optional)and mix everything completely. 

4. Deep fry on medium flame, perfectly cook it for 7 to 8minutes,it becomes soft and juicy .

5. Now let's make awesome chilli flavored sauces. we're going to add all the sauces to chicken stock. When you use chicken stock you get the real flavor. 

6. Add soya sauce,vinegar, pinch of brown sugar, chilli sauce,flavoring salt and finely chopped garlic.check the taste and make sure everything is mixed proportionately. No need to add extra salt.

7. Now add in oil on a hot pan,add red chillies and let the chillies discolor to get black.In this add all the slurry.bring this to a nice boil and then add fried chicken peices.let the pieces absorb all the sauces.

8. For thickness add some cornflour slurry.check the consistency required and finely top it off with some spring onions and cashews.
